Weetbix Breakfast Balls (Gluten Free/Vegan/No Bake/Low Sugar)


Breakfast in a bite. These weetbix breakfast balls make the perfect on the go breakfast without you having to wash your cereal bowl. They are high in fibre, a good source of healthy fats and low in sugar with only 3 dates!


Serves: 20 balls

Prep time: 15 minutes

Set time: 1 hour


Ingredients:

  • 3 pitted dates

  • 2 tablespoons of nut butter or choice (we used a mixed nut butter)

  • 40 grams of cashews

  • 50 grams of walnuts

  • 2 gluten-free weetbix

  • 1 cup of rolled oats

  • ½ cup of desiccated coconut

  • 1 teaspoon of vanilla essence

  • 2 tablespoons of melt coconut oil

  • 1 teaspoon of cinnamon

  • Pinch of salt

  • Chia seeds or desiccated coconut to roll the balls in


Steps:

  1. Soak your dates and cashews in boiling for 10 minutes, then drain the water.

  2. Add all of your ingredients into a food processor and blend until a soft sticky mixture forms.

  3. Using your hands, roll the mixture into bite-sized balls, then coat your balls by rolling them in chia seeds or desiccated coconut.

  4. Put the balls in an airtight container and place them in the fridge for at least an hour to harden.

  5. Enjoy!


Note:

  • If your mixture isn't sticking together you may have to add more dates

  • They last less than a week in our fridge due to them being so delicious but you can store them in an airtight container in the fridge or freezer.
