
These healthy cookies make a perfect on the go snack or afternoon tea for the kids. They are made with healthy fats, are nut free and contain no refined sugar.
Makes: 15 cookies
Prep time: 5 minutes
Bake time: 10-12 minutes
Ingredients:
1 cup of oat flour
½ a cup of tapioca flour
¼ a cup of coconut flour
1 teaspoon of baking soda
2 and a ½ tablespoons of tahini
4 tablespoons of maple syrup
1 tablespoon of milk of choice
2 teaspoons of ground ginger
½ a teaspoon of ground cinnamon
¼ a teaspoon of nutmeg
Steps:
Preheat your oven to 180C fan forced and line a baking tray.
Mix your oat flour, tapioca flour, coconut flour, baking soda, ginger, cinnamon and nutmeg in a mixing bowl.
Add your tahini, maple syrup and milk and mix until fully combined.
Roll your dough into 15 balls and place on a baking tray.
Lightly press down your balls with a fork creating a cross pattern.
Bake in the oven for 10-15 minutes, depending on how hard you would like your cookies.
Let them cool for about ten minutes and then enjoy!
