Spinach and Pumpkin Soup (Gluten Free/ Vegan)

A nice simple healthy soup for when you're not feeling your best.

Serves: 4-6

Prep time: 10 minutes

Cook time: 50 minutes


  • 3 cups of baby spinach

  • 2 medium brown onions chopped

  • ½ a medium pumpkin diced (approximately 1.5kg)

  • 3 carrots (diced)

  • 1 tablespoon of Ginger

  • ½ a tablespoon of Garlic

  • 1 vegetable stock cube

  • 1 cup of water


  1. Place a large pot on a medium to high heat and melt the coconut oil.

  2. Cook the onion and the carrots until the onion starts to brown.

  3. Mix through the ginger and garlic and cook until fragrant.

  4. Add the pumpkin, vegetable stock cube and water and bring to a boil.

  5. Cover the pot, bring it to a high simmer and leave for 30 minutes or until the vegetables are soft.

  6. Add the spinach to your soup mix.

  7. Get your stick blender or potato masher and blend until the consistency of your choosing.

  8. Taste and season with as much salt and pepper as you like.

  9. Serve with some crusty bread and enjoy!
