Merry Christmas! These raw gingerbread men make the perfect small gift.
Makes: 12 gingerbread men
Prep: 13 minutes
Chill: 1 hour
1 cup of walnuts
1 cup of gluten free oats
2 tablespoons of chia seeds
12 pitted dates
1 tablespoon of coconut flour
2 tablespoons of coconut oil
1 teaspoon of vanilla extract
2 teaspoon of ground ginger
2 teaspoons of ground cinnamon
¼ a teaspoon of ground nutmeg
Soak your dates in boiling water for 10 minutes then drain.
Place all of your ingredients in the food processor and blend for 3 minutes until all of the ingredients are fully combined.
Pour mix into brownie pan (on top of baking paper). Use your hands to evenly spread mix into the tray.
Place a second sheet of baking paper on top of brownie pan and place second brownie pan inside of first brownie pan, put trays on the floor and then compress.
Place in the fridge to chill for 30 minutes.
Using cookie cutters cut the dough into shapes and then placed the cut cookies into the fridge to chill for a further 30 minutes.
