Quick Pickled Onion (Gluten Free/Vegan + No Sugar)


Who said pickling had to be hard? Add a unique flavour to your sandwiches, tacos, or any other dish you want something pickled. We had it on Japanese oatmeal!

Serves: 375ml jar

Prep time: 5 minutes

Time until ready: 1 day

Ingredients:

  • 1 red onion

  • ¼ cup of white vinegar

  • ¼ cup of apple cider vinegar

  • ½ cup of water

  • 1 teaspoon of salt

  • 1 teaspoon of chili (less or more on preference)


Steps:

  1. Cut the onion in half, then thin slices to make moon crescents.

  2. Stuff the jar with the onion.

  3. Bring the vinegar, water, salt and chili to a simmer.

  4. Pour the hot liquid in the jar over the onion until it is fully submerged.

  5. Wait until the liquid is cool, then put a lid on the jar and place it in the fridge.

  6. Wait about a day, then enjoy :)
