Oat Pulp Cookies (Vegan/Gluten Free/No Refined Sugar)


These cookies are perfect to help reduce your food waste. I created this recipe by using the left over pulp from our homemade oat milk. These delicious cookies are super easy and quick to make. Perfect for a snack, treat or even an on the go breakfast.


Makes: 6 cookies

Prep time: 5 minutes

Bake time: 10 minutes


Ingredients:

  • 200 grams of oat pulp. From leftover oat milk.

  • ¼ cup of rolled oats

  • 6 dates chopped up

  • 2 tablespoons of almond meal

  • 1 teaspoon of cinnamon

  • 1 teaspoon of maple syrup

  • 1 teaspoon of vanilla extract


Steps:

  1. Preheat your oven to 180C fan forced and line a baking tray.

  2. Mix all of your ingredients together in a bowl.

  3. Roll mixture into 6 balls and then flatten on the baking tray.

  4. Bake in the oven for 10 minutes or until golden.

  5. Let them cool on a wire rack, then enjoy!
