It tastes like a spoon of nut butter in a bite. These balls are delicious and are high in energy.
Makes: 24 balls
Prep time: 15 minutes
Chill time: 1 hour
1 cup of rolled oats
12 pitted dates
1 and a ½ cups of mixed nuts
2 tablespoons of nut butter
1 tablespoon of chia seeds
2 tablespoons of melted coconut oil
1 tablespoon of desiccated coconut
Optional: 1 cup of crushed mixed nuts for rolling
Soak your dates in boiling water for 10 minutes and then drain.
Add all of the ingredients to a food processor and blend until well combined. You may need to scrape down the sides with a spatula.
Roll your mixture into preferred sized balls then roll them in your crushed mixed nuts
Place your balls in the fridge to harden for at least an hour.
