
A great healthier alternative to a mint slice.
Serves: 20 balls
Prep time 15 minutes
Chill time: 1 hour
Ingredients:
8 pitted dates
½ a cup of cashews
½ a cup of walnuts
2 tablespoons of chia seeds
2 tablespoons of cocoa powder
1 tablespoon of peppermint extract
⅓ of a cup of melted coconut oil
1 cup of rolled oats
1 teaspoon of maple syrup
Optional: desiccated coconut for rolling
Steps:
Soak your dates in boiling for 10 minutes, then drain the water.
Add all of your ingredients into a food processor and blend until a soft sticky mixture forms
Using your hands, roll the mixture into bite-sized balls, then coat your balls in desiccated coconut
Put the balls in an airtight container and place them in the fridge for at least an hour to harden.
Enjoy! They last less than a week in our fridge due to them being so delicious but you can store them in an airtight container in the fridge or freezer.
