Mexican Whole Roasted Cauliflower (Gluten Free/Vegan/Dairy Free)


The perfect centrepiece for your table. This meal is super simple and easy and it will wow your friends.


Ingredients:

  • 1 head of cauliflower

  • 2 tablespoon of avocado oil or olive oil

  • 1 tablespoons of tomato paste

  • 2 tablespoons of cumin powder

  • 1 tablespoon of paprika powder

  • ⅛ of cayenne pepper

  • ½ teaspoon of salt

  • ½ teaspoon of pepper

  • ½ a tablespoon of coriander powder

  • 1 tablespoon of lime juice

  • 1 tablespoon of shredded coconut


Steps:

  1. Preheat your oven to 185C fan forced

  2. Cut the stem off your cauliflower and wash the cauliflower head. Place the cauliflower on a lined baking tray.

  3. In a bowl, add your spices, oil, lime juice and tomato paste and mix together.

  4. Coat your cauliflower in your spice mixture and then sprinkle your coconut on top.

  5. Bake in the oven 40-45 minutes or until the inside of the cauliflower is soft.

  6. Remove from the oven and Enjoy!
