These zesty lemon and macadamia bars make the perfect refreshing snack.

Bake time: 8 minutes
12 pitted dates
2 cups of macadamias
2 cups of shredded coconut
1 teaspoon of vanilla
3 tablespoons of melted coconut oil
¼ a cup of lemon juice (about 2 lemons)
The zest of 2 lemons
Preheat your oven to 110C and line a brownie tray.
Soak your dates in boiling water for 10 minutes then drain.
Add all of your ingredients to a food processor and blend until the mixture is fully combined and the dates have broken down.
Press your mixture into your brownie tray
Bake in the oven for 8-10 minutes
Let it completely cool before cutting.
Cut up and then store in the fridge
