Lemon and Macadamia Bars (Gluten Free/Vegan)


These zesty lemon and macadamia bars make the perfect refreshing snack.


Serves: 12 slices

Prep time: 10 minutes

Bake time: 8 minutes


Ingredients:

  • 12 pitted dates

  • 2 cups of macadamias

  • 2 cups of shredded coconut

  • 1 teaspoon of vanilla

  • 3 tablespoons of melted coconut oil

  • ¼ a cup of lemon juice (about 2 lemons)

  • The zest of 2 lemons


Steps:

  1. Preheat your oven to 110C and line a brownie tray.

  2. Soak your dates in boiling water for 10 minutes then drain.

  3. Add all of your ingredients to a food processor and blend until the mixture is fully combined and the dates have broken down.

  4. Press your mixture into your brownie tray

  5. Bake in the oven for 8-10 minutes

  6. Let it completely cool before cutting.

  7. Cut up and then store in the fridge
