
Oatmeal for dinner, this recipe is easy peasy Japanese. A quick 15 minute dish, that is full of awesome Japanese flavours.

Ingredients:
1 cup of rolled oats
2 tablespoons of miso paste
2 teaspoons of minced garlic
2 teaspoons of minced ginger
2 cups of water
150 grams of chopped mixed mushrooms (we used shitake, oyster and enoki)
1 teaspoon of tamari
1 teaspoon of coconut oil
Toppings:
2 eggs (make it vegan by cooking tofu in some tamari)
¼ cup of coriander
Chili flakes
Sesame seeds
½ avocado
Steps:
Heat oil in a frying pan at medium to high heat.
Add the mushrooms and tamari to the frypan and saute whilst you cook the oats.
In a small pot cook the garlic and ginger until fragrant.
Add the oats, water, and miso to the pot and stir until well combined. Let it cook for 2 minutes and then take it off the heat. The residual heat will continue to cook the oats.
Whilst you cook the oats, push the mushrooms to one side of the pan and add a little bit of oil to cook your eggs.
Crack the eggs in the frypan and cook until your liking.
Plate up your oatmeal and garnish with your topping.
