
Super easy granola. The perfect way to pimp up your breakfast. An extremely versatile recipe as you can switch out ingredients.

Ingredients:
Dry mix:
2 cups of mixed nuts (we used cashews, walnuts, hazelnuts and almonds)
1 cup of shredded coconut
¼ a cup of flax seeds
¾ a cup of sunflower seeds
¼ a cup of pepitas
1 tablespoon of sesame seeds
2 tablespoons of chia seeds
1 and a ½ cup of puffed amaranth (or you can used puffed quinoa, puffed rice or puffed buckwheat)
1 tablespoon of ground cinnamon
Wet mix:
½ a tablespoon of vanilla essence
¾ a cup of melted coconut oil
¼ a cup of honey
Steps:
Preheat your oven to 180C fan forced and line a baking tray with baking powder.
Mix all of your dry ingredients in a bowl.
Pour in your wet ingredients and mix until well combined.
Place your granola mixture into the baking tray and press down the mixture.
Bake in the oven for 20 minutes or until golden brown. If you want your granola extra chunky take it out half way and press down on it with a wooden spoon.
Take your granola out of the oven and let it sit for 10 minutes, then slide the baking paper onto a wire rack and let your granola cool completely. It will become crispier the more it cools.
Place in an airtight container or jar. Lasts in your cupboard for up to weeks.
Sprinkle over milk, yoghurt or your porridge, ENJOY!
