Who knew apple pie was so easy. The perfect gluten-free apple pie with a tasty crust and sweetened with just 3 teaspoons of maple syrup and the natural sugar of apples. It's also a delicious way to use up your unwanted apples.
Serves: 12 slices
Prep time: 20 minutes
Cook time: 15 minutes
1 cup of grated apple
1 teaspoon of maple syrup
1 teaspoon of cinnamon
1 tablespoon of water
4 tablespoons of your applesauce
100mls of melted coconut oil
200 grams of oat flour
140 grams of tigernut flour or almond flour
A pinch of salt
1 tablespoon of lemon juice
2 tablespoons of maple syrup
2 tablespoons of peanut butter or nut butter of choice
Preheat your oven to 180C and line a pie or cake tin with parchment paper.
Add your apple sauce ingredients to a small pot and cook on a medium heat for about 5 minutes. Grab your stick blender and blend until it forms a smooth thick sauce.
Combine all of your crust ingredients to a large bowl. It should form a crumbly dough.
Evenly press your dough mixture into your tin.
Place your crust in the oven to cook for 15 minutes
Slice your apples into thin pieces whilst your crust is cooking.
Add your sliced apples, peanut butter, lemon juice and maple syrup to a pan and cook on a medium heat for about 5 minutes until your apple slices have softened but can still hold their shape.
Pour the liquid from the apples into a seperate bowl
Remove your pie crust from the oven and then layer your apples over each other in a circle direction working from the outside of the crust to the centre.
Pour the liquid over the apples
Place in the oven for 15 minutes
Cut up and enjoy your apple pie warm! We also loved having ours cold.
