
The perfect winter dessert. This crumble is super tasty and the use of ginger is great to help keep your immune system healthy. You can have it for dessert or even for breakfast as an oatmeal bake.

Ingredients:
500 grams of rhubarb
400 grams of peach
1 tablespoon of lemon juice
5 tablespoons of water
2 tablespoons of maple syrup
½ a tablespoon of grated ginger
crumble:
1 cup of quick oats
½ a cup of rolled oats
¼ of a cup of pumpkin seeds
2 tablespoons of hard coconut oil
2 teaspoons of maple syrup
Steps:
Preheat your oven to 180C fan forced.
Roughly chop the rhubarb and peaches into inch pieces.
Add the fruit, lemon juice, ginger, water and maple to a small pot and simmer until the fruit becomes soft but not mushy.
Transfer your fruit mix into a pie dish.
Create your crumble by adding the quick oats, the rolled oats, maple syrup, pumpkin seeds and coconut oil into a small mixing bowl. Using your hands rub the mixture together until fully combined.
Scatter your crumble mixture on top of the fruit mixture.
Bake in the oven for 15-20 or until golden brown.
Let it cool for 10 minutes before serving. Enjoy!
