Christmas Pudding Balls (Gluten Free/Vegan/No Refined Sugar)


Christmas in a bite. These Christmas balls are delicious and are packed filled with gingerbread goodness. They make the perfect healthy Christmas themed dessert or snack.


Makes: 16 small balls

Prep time: 12 minutes

Chill time: 1 hour


Ingredients:

  • 10 pitted dates

  • 1 cup of walnuts

  • 1 and a ¼ teaspoon of ground ginger

  • 1 teaspoon of ground cinnamon

  • ¼ a teaspoon of nutmeg

  • 1 tablespoon of chia seeds

  • 2 tablespoons of hemp seeds

  • ½ a teaspoon of vanilla extract

  • 1 tablespoon of melted coconut oil

  • 30 grams of dark chocolate


Steps:

  1. Soak your dates in boiling water for 10 minutes, then drain.

  2. Add all of your ingredients to a food processor and blend until all the ingredients are combined.

  3. Roll your mixture into balls (I rolled them into 10 cent balls).

  4. Place your balls in the fridge for about an hour to set.

  5. Enjoy!
