Choc Berry Cornflake Balls (Gluten Free/ Vegan/ No Refined Sugar)


These decadent choc berry cornflake balls remind me of Christmas. They make a healthy delicious treat as they are rich in fudgy chocolate with a subtle berry flavour and a delicious crunch from the cornflakes.


Serves: 20 balls

Prep Time: 20 minutes

Chill time: 1 hour


Ingredients:

  • 10 pitted dates

  • 1 cup of walnuts

  • 2 cups of cornflakes + plus extra for rolling the balls in them

  • 2 tablespoons of cocoa powder

  • ½ cup of melted coconut oil

  • 1 tablespoon of chia seeds

  • ⅓ of a cup of goji berries

  • Pinch of salt


Steps:

  1. Soak your dates in boiling for 10 minutes, then drain the water.

  2. Add all of your ingredients into a food processor and blend until a soft sticky mixture forms

  3. Using your hands, roll the mixture into bite sized balls, then coat your balls in crushed up cornflakes.

  4. Put the balls in an airtight container and place them in the fridge for at least an hour to harden.

  5. Enjoy! They last less than a week in our fridge due to them being so delicious but you can store them in an airtight container in the fridge or freezer.
