Chia Fudge Bars (Gluten Free/ Vegan/ No Bake)


These decadent fudgy chia bars melt in your mouth and are packed with healthy fats. With no bake time, they are quick and easy to make. They make a perfect snack or a delicious sweet treat. If you have a peanut allergy you can substitute the peanut butter for almond butter, sunflower butter, coconut butter or even tahini.


Serves: 10 bars

Prep time: 15 minutes

Chill time: 1 hour


Ingredients:

  • 6 pitted dates

  • 50 grams of cashews

  • 50 grams of walnuts

  • 2 tablespoons of chia seeds (we used 1 tbps white and the other black)

  • ¼ cup coconut oil melted

  • ¼ cup peanut butter or nut butter of your choice

  • 1 cup rolled oats


Steps:

  1. Soak your dates and cashews together in boiling water for at least 10 minutes.

  2. After you finish soaking the dates and cashews, add all your ingredients to your food processor and blend until it forms a thick paste.

  3. Line a small baking pan with baking paper (we used a pan that was 23cmx17cm.)

  4. Press your mixture into the pan and then smooth out with your parchment paper or wet hands so it forms an even surface.

  5. Let it chill in the fridge for at least an hour.

  6. Remove your bars from the pan and cut into as many pieces as you like we cut it into 10.

  7. Enjoy!
