
Carrot cake in a bite.
Serves: 16 balls
Prep time: 10 minutes
Chil time: 1 hour
Ingredients:
50 grams of pitted dates (about 10 dates)
1 cup of grated carrot
½ cup/ 50 grams of walnuts
½ a teaspoon of cinnamon
¼ of a teaspoon of ginger
⅛ of a teaspoon of nutmeg
¼ of a cup of melted coconut oil
1 tablespoon of coconut flour
½ a teaspoon of vanilla essence
½ a cup of oats
Optional: ¼ of a cup of desiccated coconut for rolling
Steps:
Soak your dates in boiling water for 10 minutes.
Grate your carrot.
Add all of the ingredients to a food processor and blend until well combined. You may need to scrape down the sides with a spatula.
Roll your mixture into preferred sized balls then coat them in desiccated coconut.
Place your carrot cake balls in the fridge to harden for at least an hour.
