Carrot cake balls (Gluten Free/ Dairy Free/ Vegan/ No Refined Sugar)

Carrot cake in a bite.

Serves: 16 balls

Prep time: 10 minutes

Chil time: 1 hour


  • 50 grams of pitted dates (about 10 dates)

  • 1 cup of grated carrot

  • ½ cup/ 50 grams of walnuts

  • ½ a teaspoon of cinnamon

  • ¼ of a teaspoon of ginger

  • ⅛ of a teaspoon of nutmeg

  • ¼ of a cup of melted coconut oil

  • 1 tablespoon of coconut flour

  • ½ a teaspoon of vanilla essence

  • ½ a cup of oats

  • Optional: ¼ of a cup of desiccated coconut for rolling


  1. Soak your dates in boiling water for 10 minutes.

  2. Grate your carrot.

  3. Add all of the ingredients to a food processor and blend until well combined. You may need to scrape down the sides with a spatula.

  4. Roll your mixture into preferred sized balls then coat them in desiccated coconut.

  5. Place your carrot cake balls in the fridge to harden for at least an hour.

  6. Enjoy!
