
Super healthy brownies. High in fibre and naturally sweetened with apples and just 1 tablespoon of maple syrup. A delicious treat for everyone to enjoy!
Serves: 12 slices
Prep time: 5 minutes
Cook time: 20 minutes
Ingredients:
300 grams of apple
1 cup of rolled oats
1 cup of gluten-free flour (we used the Has No brand from Aldi)
¼ of a teaspoon of baking powder
1 teaspoon of vanilla essence
3 eggs
3 tablespoons of cocoa powder
1 tablespoon of maple syrup
120 grams of coconut oil
90 grams of dark chocolate (we used 85%)
Optional mix-ins but highly recommended: a handful of walnuts and a handful of choc chips.
Steps:
Preheat your oven to 180C fan-forced and line a brownie tray.
Melt your coconut oil and dark chocolate in a small saucepan.
Blend your oats until it forms a flour-like powder.
Add all of your ingredients (except for the mix-ins) to a food processor and blend until well combined and a smooth mixture forms.
Add your optional mix-ins to the blender and pulse until evenly mixed in.
Pour your mixture into your brownie tray.
Place in the oven and cook for 20-25 minutes or until you insert a knife and it comes out clean.
Take out of the oven and let it sit in the tray for 10 minutes then transfer to a cooling rack.
Cut up into 12 pieces and ENJOY!
Notes:
These brownies are on the cakier side, if you wanted a more fudge-like brownie add an extra 20 grams of coconut oil.
