Apple Brownies (Gluten Free/ Dairy Free/ No Refined Sugar/ High Fibre)


Super healthy brownies. High in fibre and naturally sweetened with apples and just 1 tablespoon of maple syrup. A delicious treat for everyone to enjoy!


Serves: 12 slices

Prep time: 5 minutes

Cook time: 20 minutes


Ingredients:

  • 300 grams of apple

  • 1 cup of rolled oats

  • 1 cup of gluten-free flour (we used the Has No brand from Aldi)

  • ¼ of a teaspoon of baking powder

  • 1 teaspoon of vanilla essence

  • 3 eggs

  • 3 tablespoons of cocoa powder

  • 1 tablespoon of maple syrup

  • 120 grams of coconut oil

  • 90 grams of dark chocolate (we used 85%)

  • Optional mix-ins but highly recommended: a handful of walnuts and a handful of choc chips.


Steps:

  1. Preheat your oven to 180C fan-forced and line a brownie tray.

  2. Melt your coconut oil and dark chocolate in a small saucepan.

  3. Blend your oats until it forms a flour-like powder.

  4. Add all of your ingredients (except for the mix-ins) to a food processor and blend until well combined and a smooth mixture forms.

  5. Add your optional mix-ins to the blender and pulse until evenly mixed in.

  6. Pour your mixture into your brownie tray.

  7. Place in the oven and cook for 20-25 minutes or until you insert a knife and it comes out clean.

  8. Take out of the oven and let it sit in the tray for 10 minutes then transfer to a cooling rack.

  9. Cut up into 12 pieces and ENJOY!


Notes:

  • These brownies are on the cakier side, if you wanted a more fudge-like brownie add an extra 20 grams of coconut oil.
