Apple and Berry Crumble Bar (Gluten Free/Vegan/No Refined Sugar)


Apple crumble to go. These bars are the perfect healthy alternative to the classic apple crumble. They are made with zero refined sugars and are only sweetened with fruit and 1 tablespoon of maple syrup. Enjoy warm or cold!


Serves: 12 slices

Prep: 15 minutes

Cook time: 30 minutes


Ingredients:

Base:

  • 10 pitted dates (30 grams¼ of a cup of raw cashews

  • ¼ of a cup of walnuts

  • 2 cups of rolled oats

  • ¼ cup of melted coconut oil

  • 1 teaspoon of vanilla essence

Apple and berry filling:

  • 300 grams of apples with the stem removed (about 3 small apples)

  • ½ cup of frozen mixed berries

  • 4 tablespoons of chia seeds

  • 1 tablespoon of maple

  • ½ cup of warm water


Crumble:

  • 1 cup of rolled oats

  • 1 cup of corn flakes

  • 1 tablespoon of maple syrup

  • 1 tablespoon of pepitas

  • ¼ of a cup of melted coconut oil


Steps:

  1. Preheat your oven to 180C fan forced and line a baking tray.

  2. Soak your dates in boiling for 10 minutes.

  3. Add your base ingredients to a food processor and blend until the ingredients are well combined.

  4. Press your base mixture into a baking tray and place in the oven for 10 minutes.

  5. Create your apple and berry filling by adding all your ingredients to the food processor until well combined.

  6. Pour filling over your base.

  7. Then create your crumble by placing all the ingredients in the food processor, pulse about 3 times until your oats have slightly broken down.

  8. Sprinkle and then lightly press the crumble over the apple and berry filling.

  9. Place in the oven for about 30-35 minutes until the crumble becomes golden brown.

  10. Remove your crumble bars out of the oven and let it sit in the baking tray for 10 minutes, then transfer to a wire rack and let it completely cool.

  11. Cut up your crumble bars into 12 pieces and enjoy!
