
This is our favourite Sunday morning breakfast. A healthy twist on the classic childhood pancake.
Serves: 2 people
Prep time: 2 minutes
Cook time: 10 minutes
Ingredients:
2 bananas
4 eggs
⅓ a cup of self-raising gluten-free flour (add more flour if the batter looks too runny)
Optional - A pinch of salt
Steps:
Add ingredients to a blender and blend until batter-like texture.
Oil your pan and pour your pancakes at to your desired size.
Flip the pancake once it starts to form small bubbles on the top side and then cook for a few more minutes or until cooked through.
Enjoy with your favourite topping. We had ours with homemade breakfast crumble, peanut butter and strawberries.
