Choc Berry Cornflake Balls (Gluten Free/ Vegan/ No Refined Sugar)

These decadent choc berry cornflake balls remind me of Christmas. They make a healthy delicious treat as they are rich in fudgy chocolate with a subtle berry flavour and a delicious crunch from the cornflakes.

Ingredients
  

  • 10 pitted dates
  • 1 cup of walnuts
  • 2 cups of cornflakes + plus extra for rolling the balls in them
  • 2 tablespoons of cocoa powder
  • ½ cup of melted coconut oil
  • 1 tablespoon of chia seeds
  • cup of goji berries
  • pinch of salt

Instructions
 

  • Soak your dates in boiling for 10 minutes, then drain the water.
  • Add all of your ingredients into a food processor and blend until a soft sticky mixture forms
  • Using your hands, roll the mixture into bite sized balls, then coat your balls in crushed up cornflakes.
  • Put the balls in an airtight container and place them in the fridge for at least an hour to harden.
  • Enjoy! They last less than a week in our fridge due to them being so delicious but you can store them in an airtight container in the fridge or freezer.
