Chia Fudge Bars (Gluten Free/ Vegan/ No Bake)

These decadent fudgy chia bars melt in your mouth and are packed with healthy fats. With no bake time, they are quick and easy to make. They make a perfect snack or a delicious sweet treat. If you have a peanut allergy you can substitute the peanut butter for almond butter, sunflower butter, coconut butter or even tahini.

  • 6 pitted dates
  • 50 grams of cashews
  • 50 grams of walnuts
  • 2 tablespoons of chia seeds we used 1 tbps white and the other black
  • ¼ cup of coconut oil melted
  • ¼ cup of cup peanut butter or nut butter of your choice
  • 1 cup of cup rolled oats


  • Soak your dates and cashews together in boiling water for at least 10 minutes.
  • After you finish soaking the dates and cashews, add all your ingredients to your food processor and blend until it forms a thick paste.
  • Line a small baking pan with baking paper (we used a pan that was 23cmx17cm.)
  • Press your mixture into the pan and then smooth out with your parchment paper or wet hands so it forms an even surface.
  • Let it chill in the fridge for at least an hour.
  • Remove your bars from the pan and cut into as many pieces as you like we cut it into 10.
  • Enjoy!
